Ragda Patties!

Hello, everyone
Today I have tried ragda patties. This is an Indian chat which is really yummy, tangy in taste, and mouthwatering. As usual, this is very easy to prepare. So let’s proceed to the recipe.

For Ragda

INGREDIENTS

White peas: 2 cups (overnight soaked)
Potato: 2 peel and roughly chopped
Oil:  for cooking
Cumin seeds: 1/4 teaspoon
Asafoetida: 1 pinch
Onion: 1 (finely chopped)
Ginger-garlic paste: 1 teaspoon
Green chilies: 2 (chopped)
Tomato: 2 medium sized (finely chopped)
Turmeric powder: 1 teaspoon
Red chili powder: 1 teaspoon
Coriander powder: 1 teaspoon
Garam masala powder: 1/2 teaspoon
Salt: according to taste
Water: for cooking

RECIPE

  1. Drain the water from overnight soaked white peas.
  2. Put a pressure cooker on medium flame, add drained white peas, potatoes, 1/2 teaspoon turmeric powder, 1 teaspoon salt, and 5 cups of water.
  3. Now cover the lid of the cooker and cook till 7-8 whistles and turn off the flame after 7-8 whistles.
  4. When pressure is released, open the lid of the cooker and check whether peas are cooked or not, if not then cook for some more time. and lightly mash them.
  5. Now put a pan on medium flame and add 2 teaspoon oil and let the oil heat.
  6.  Add cumin seeds and asafoetida, and let them splutter.
  7. Now add chopped onion, ginger-garlic paste, and chopped green chilies, and saute them till they turn golden brown.
  8. Now add chopped tomato and fry well and add 1/2 teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon coriander powder, 1/2 teaspoon garam masala powder, and 2 tablespoons water. Now fry them well until the oil releases from sides.
  9. Now add mashed white peas and potatoes.
  10. Mix them well and add salt according to your taste and cook till it turns thick.
  11. Turn off the flame.
  12. Ragda is ready!

For Patties

INGREDIENTS

Potato: 5 medium sized (boiled and peeled)
Poha (flattened rice): 1/2 cup (soaked for 10 minutes)
Turmeric powder: 1/2 teaspoon
Red chili powder: 1/2 teaspoon
Chaat masala powder: 1 teaspoon
Cumin seeds powder: 1/2 teaspoon
Amchur (dry mango powder): 1/2 teaspoon
Salt: according to taste
Oil: for shallow fry the patties

RECIPE

  1. Take a large bowl. Take boiled potatoes and poha (flattened rice) and mash them well.
  2. Add turmeric powder, red chili powder, chaat masala powder, amchur, and cumin seeds powder according to the ingredients. Add salt according to your taste and mix well.
  3. Put a pan on low flame and add 1 tablespoon oil and let the oil heat.
  4. It’s time to make patties. In parallel, take a small portion of potato mixture and make balls with oil greased palms and flatten slightly, repeat this process and make patties, seal the cracks and shallow fry all the patties on medium flame, flip to another side and wait for it to turn golden brown and crispy.
  5. Turn off the flame.
  6. Patties are ready!

For Serving

INGREDIENTS

Onion: 1 medium sized (finely chopped)
Tomato: 1 medium sized (finely chopped)
Curd: 1/2 bowl
Tamarind chutney: 1/2 bowl
Coriander-mint chutney: 1/2 bowl
Barik sev: 1/2 cup (easily available in market)
Chaat masala: 1/2 cup 
Chopped coriander leaves: 1/2 cup

(Tamarind chutney is easily available in market and i’ll publish tamarind chutney and coriander-mint chutney recipe on my blog.)

PROCESS

  1. Take a plate and put 2-3 patties on it.
  2. Now pour 1/2 cup of ragda, 1 tablespoon curd, 1/2 tablespoon tamarind chutney, 1/2 tablespoon coriander-mint chutney, 1/4 teaspoon chaat masala on it.
  3. Put 1 teaspoon chopped onion, 1 teaspoon chopped tomato, 1 teaspoon barik sev, and 1 teaspoon chopped coriander leaves on it and serve.
  4. Ragda patties are ready.
