Today I have tried a new type of kebab. Veg shami kebab is a healthy and tasty starter, made from ingredients which are easily available in your kitchen. So, let’s have a look.
Black chickpea: 2 cups ( soaked overnight)
Cinnamon: 1 inch
Lemon juice: 2 tablespoons
Black cardamom: 2
Coriander seeds: 1 tablespoon
Black pepper: 6
Dried red chilies: 4
Garlic cloves: 5
Ginger: 2 inches
Green chilies: 4
Onion: 1 (sliced)
Cumin: 1 tablespoon
Chopped Coriander leaves: 2 tablespoons
Chopped mint leaves: 2 tablespoons
Garam masala powder: 1/2 teaspoon
Dried mango powder (amchur): 1/2 teaspoon
Turmeric powder: 1/2 tablespoon
Gram flour: 4 tablespoons
Semolina: 2 tablespoon
Salt: according to taste
Water: 3 cups
First, take a pressure cooker and put black chickpea, cinnamon, black cardamom, coriander seeds, cloves, black pepper, garlic cloves, ginger, green chilies, onion, cumin, dried red chilies, salt, and turmeric powder according to ingredients which are mentioned above.
Cook till 5 whistles, turn the gas burner off, and when steam is released from the cooker, open the lid and drain the water. Rest for 5 minutes and transfer all the cooked ingredients into a mixer jar and make a mixture.
Now put the mixture in a bowl, add gram flour, semolina, chopped coriander leaves and mint leaves, dried mango powder, lemon juice, garam masala powder, and salt. Combine well and make a dough.
It’s time to make kebabs. Put a pan on medium flame and heat oil, make balls from the concoction with oil greased palms and flatten slightly, seal the cracks and shallow fry all the patties on medium flame, flip to another side and wait for it to become golden brown and crispy.
Your kebabs are ready! have with either chutney or sauce.
